Skillet Enchiladas

Ingredients:

2 lbs. ground beef (or Venison)
8 inch flour tortillas
1 small can of green chilies
sliced jalapenos (optional)

2 cans Enchilada sauce
3/4 cup chopped onion
8 ozs. shredded cheddar cheese
1 small can of sliced olives

Cooking Instructions:
Brown ground beef with chopped onion. Drain off fat.
Take tortillas and spread 1 tsp of green chilies in center. Fill with ground beef mixture, olives and some shredded cheese. Roll up and place in baking dish. Continue filling tortillas until baking dish is full. I use a lasagna dish. Sprinkle any remaining meat mixture over the top. Sprinkle heavily with cheese. Top with jalapenos. Bake at 350 for about 25-30 minutes.
Serving Suggestions:
Serve with sour cream on top if you like.
